Today we would like to share some recipes straight from our kitchens in Iguazu, Atacama and Patagonia.

First we head to Awasi Iguazu in Northern Argentina for a classic chocolate chip cookie recipe with a modern twist: Chef Aaron Castillo Tellería’s recipe uses coconut milk and canola oil instead of cow’s milk and butter.

Next we head to Awasi Atacama in Northern Chile where Chef Juan Pablo Mardones replaces sugar with honey and adds some vanilla, cloves and ginger to create a warm spicy dough.

Next to Awasi Patagonia, the world’s southernmost Relais & Chateaux hotel, where Chef Matías Crosta mixes dark and white chocolate with coffee and walnuts to energise guests as they explore Patagonia.
